Quinoa, oats, & beetroot pancakes with Algarrobina honey

(GF, vegetarian)

6 pancakes

Ingredients:

  • 1 cup quinoa, soaked overnight
  • ½ cup of oats
  • 2 to 4 beetroots depending on size (2 big, 4 small)
  • 1 egg
  • ½ cup of milk of your choice, or water
  • 1 pinch of salt
  • 1 tablespoon of cane sugar
  • 1 spoon of honey
  • 1 spoon of vanilla
  • ½ tablespoon of baking powder
  • Zest of half an orange
  • Greek yogurt (optional)
  • Carob honey

Preparation:

Put the quinoa to soak the night before, in the morning drain it and rinse it. Place all the ingredients in the blender and blend well, for about 3 min and the dough will be ready. Fry the pancakes on both sides in coconut oil and serve with a spoonful of Greek yogurt and Algarrobina honey, or honey of your choice
