The Most Super Powerful Green Pasta Sauce

GF, Vegan option. 

This recipe is spectacular!! It’s inspired in the peruvian “salsa verde” it's a mega super food for the kids and everybody is going to love it!


  • 1 cup of kale
  • 1 cup cilantro
  • 1 cup de fresh parsley
  • 1 cup watercress
  • 1 ripe avocado
  • 3 cups fresh basil
  • 2 cups fresh spinach
  • 1 medium onion
  • 4 garlic cloves
  • 1/2 bell peper
  • 1/2 cup of fresh goat cheese, or parmesan, or tofu for vegan version.
  • 1/2 cup nuts of your choice: cashews, pecans, peanuts, almonds, walnuts, or seeds of your choice; sunflower, sesame, pumpkin.
  • 1 cup olive oil.
  • 1 teaspoon salt and pepper


Wash all the greens well, dry and cut them small, peel the avocado and cut it into cubes, cut the onion and bell pepper and peel the garlic.

In a frying pan place 1/2 cup of olive oil along with the garlic, onion and bell pepper, sauté for a few minutes no less than 5. Add all the greens including the avocado, salt and pepper and let it cook until everything has wilted well but do not let the mixture dry completely, there must still be liquid in the pan. Put the greens in the blender with all the liquid, the rest of the olive oil, the cheese or tofu, and the nuts or seeds, blend well (you can do this in 2 batches if needed).

Once creamy, return it to the pan and cook for another 5 more minutes, taste it and correct seasoning. Serve it with your pasta of choice. You can freeze it no problem. Enjoy!
